Cooking with the seasons is an easy way to eat better, save money and discover new ingredients.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Spring<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Spring brings tender greens, asparagus, peas, radishes and new potatoes. Dishes are light and fresh: think simple salads, risottos with peas and herbs, or asparagus roasted with olive oil and lemon.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Summer<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Tomatoes, courgettes, peppers, aubergines, berries and stone fruit are at their peak. Summer cooking needs little effort. A ripe tomato with salt and good olive oil is already a meal.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Autumn<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Squash, mushrooms, apples, pears and root vegetables arrive as the weather cools. Roasting brings out their sweetness, and soups and stews start to return to the table.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Winter<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cabbages, leeks, kale, citrus fruit and stored root vegetables carry us through winter. Slow braises, hearty soups and bright citrus salads balance the season&#039;s heavier dishes.
